These pancakes are the veganized Hungarian version🙂. I love them not only because they are super yummy, but also, because they are full of calcium and protein.

To make 3 large pancakes for breakfast (2 for him and 1 for me ;o)) I use

About 120 g of whole  meal flour

About 300-400 ml soymilk

1 heaped spoonful of ground flax seeds

A pinch of salt

1 tablespoon of poppy seeds or 1 shredded apple (optional)

Some oil for the frying

I mix all the ingredients until I get a smooth, pancake-mixtury density (kind of like the density of single cream). If you have time to let it stand for a while, it is even better, you may have to add some more liquid after that. I oil a pan and fry both sides. Some filling ideas:

  • Smashed bananas with ground poppy seeds or walnuts or 100 per cent cacao content chocolate and grated orange peel or shredded coconuts
  • Smashed bananas with organic peanut butter and raisins
  • Quince compote with or without chopped/ground walnuts
  • Grated apples with ground poppy seeds
  • Ground chestnuts with sugarfree jam and ground almonds
  • Ground chestnuts or chestnut puree and melted vegan chocolate
  • For non-vegans: honey and cacao, honey and cinnamon, honey and lemon, cacao and jam, and so on…
  • And a savoury idea: spinach and tofu with salt, pepper and a dash of nutmeg
